Taiwanese Cuisine

1. Sanbei Ji(三杯雞 Three Cups Chicken)
Three Cups Chicken—braised chopped chicken meat prepared with sesame oil, rice wine and soy sauce, which are the most important liquid ingredients alluded to by the expression “sanbei” (three cups)—is a standard offering of restaurants specializing in Taiwanese-style cookery.

Three Cups Chicken is traditionally made in a clay pot in which sautéed chicken chunks are stewed with rice wine, soy sauce, basil and red chili pepper until the sauce is absorbed by the ingredients.

2. Sanse Dan (三色蛋 Three-color Egg)
Three-color Egg is a well-known cold appetizer made by steaming beaten chicken egg (yellow), century egg (black), and salted duck egg (white) together. The resulting dish is a striking mix of color and flavor.

Features/Ingredients
Three-color Egg is prepared by putting diced century egg and salted duck egg into beaten chicken egg and then steaming the mixture until fully cooked. The result is a visually appealing, nutritious, creamy and savory dish that goes well with rice and is loved by young and old.
